Rudi’s Lentil Soup

This recipe originated at The Tao, a vegetarian restaurant in Bloomington, IN, sadly long gone. It’s very easy and delicious. Serve it with toasted garlic bread, corn bread, or cheese and wheat crackers.

Ingredients:

2 Tbsp. Oil

1 Cup finely chopped Onion

1 Tbsp. Oregano

1 Tbsp. Basil

½ tsp. finely chopped Garlic

1 Cup Lentils

6 Cups Water

¼ Cup Soy Sauce

1 Cup Carrots diced small

Directions:

1. Heat oil on a large sauce pan. Add onion, oregano, basil, and garlic and cook for 5 minutes, stirring occasionally.

2. Add lentils, water, soy sauce, and carrots and bring to a boil. Reduce heat and simmer for one hour. Serve with a sprinkle of chopped parsley if desired.
