Smashed Radish Salad

The Seasonal Side Bundle features a mix of produce, pantry and fresh ingredients to create a complete dish. This bundle includes items and a recipe to make a crunchy and briny smashed radish salad.

Ingredients:

  • 2 bunches of red radishes
  • 1 English cucumber
  • 1 red onion
  • ¼ cup apple cider vinegar
  • 1 lemon
  • Feta cheese
  • Garlic
  • Fresh mint
  • Fresh dill

 

Instructions:

 

- Cut the tops and bottoms off red radishes. Place radishes into a bag or dish towel, and smash into chunks with the end of a rolling pin. Cut cucumbers into rounds and red onion into slices.

- Finely chop mint leaves and dill. Combine fresh herbs with olive oil, vinegar, lemon zest and juice, grated garlic, salt, and feta. Stir until well combined.

- Toss the vinaigrette with the vegetables and serve immediately or marinate overnight.
